Production Area: Vineyards located in the hills of the Jerzu countryside

Altitude of the vineyard: around 300 m

Soil type: Sandy-loam of granite origin

Training system: Guyot

Plant density: over 4,500 per ha.

Production per hectare: 70 quintals

Age of the vineyard: 30 years

Harvest: The grapes are entirely harvested by hand in the first ten days of September

Vinification: The whole grapes are introduced into the press with cold maceration for 6-8 hours. From soft pressing a yield of 50% is obtained. Decant in steel tank at 10°C before decanting and transferring to barrels.

Fermentation and Maturation: Fermentation and maturation on the lees from September to June takes place in 30 hl French oak barrels.

Ageing: In the bottle for at least 9 months
